Rice cakes feature a lot on this blog, but my new favourite way to eat them is to make rice cake “sandwich” - one ‘slice’ is PB and banana, the other raspberry jam. Smush them together and you have a healthier, vegan and gluten free PB&B&J. :D

Spinach pesto on whole wheat pasta! 6 points!
1 1/4 tsp table salt, divided, or more to taste
8 oz uncooked whole-wheat pasta
4 1/2 cups of fresh spinach, baby variety, washed and dried
(I only used one because I was making a smaller serving)
2 tbsp of water
1 1/2 tsp olive oil, extra virgin
2 clove(s) garlic
2 1/2 tbsp low fat cream cheese
(i ended up using the skinny cow cheeses, works just as well!)
1 tsp fresh lemon juice, or to taste
this recipe is for a serving of 4.
If you don’t like spinach don’t make it!
It has a strong taste, me personally it was a little to strong, so I don’t know if I would make it again.
